So how’s everyone doing on the Sourdough Smackdown Challenge? My starter is still going strong, though my last bread was awkward cuz it got crusty while rising.
I’ve learned a lot from making the starter. And I’m proud of myself, I haven’t missed a single feeding - dumped it and started over a couple times ‘cause I thought I’d killed it, though… after a couple days it stopped rising and started smelling really bad. But then I started reading more and found Debra Wink’s articles about leucostocs and the pineapple juice solution. She did a day-by-day comparison and explanation of the phases that a new starter goes through.
So basically I’m still playing around with it. Looking forward to when I can finally do some baking.
Aw, that sucks that you had to dump it, but it is a process. Mine’s going surprisingly well, considering that I missed a feeding and have feed it pretty darn late at times. Good lucks!
